Okra Nachos Extraordinaire
Mild Okra Pickles, colby/jack shredded cheese, vadalia or sweet onion, and mushrooms, tortilla chips.
I discovered this the other night when looking for a snack and some friends were over. I took 4-5 good sized Mild Okra Pickles and sliced them up, then I sliced up several good sized mushrooms. I had a giant vadalia (or sweet onion) and sliced it into bits. I took a large plate and covered it with tortilla chips, then added the okra, mushrooms and onions. I thoroughly covered the ingredients with cheese and placed the plate in the microwave until the cheese was just about melted. Voila! Awesome nachos with awesome ingredients! Enjoy!
